And the final Christmas coffee is...
Today we're revealing the third and final single-origin coffee in the 2024 Christmas Box and this one is particularly special to Mark as he got to taste and select it in its country of origin.
If you've been following Shiloh Coffee Roasters for a while, you might remember that Mark and Jean visited Jean's home country of Kenya back in February to meet coffee farmers and learn more, first hand, about the coffee industry there.
During the trip Mark attended a tasting event with our friends from Sucafina, where he got to try over 200 different Kenyan coffees.
Two stood out to Mark and one of them - a beautiful, classic Kenyan, fully-washed coffee with bright clementine acidity and Assam black tea notes. - was selected there and then to feature in our Christmas Box.
It is double fermented, like much Kenyan coffee, and comes from the Kiamacora Estate in Kiambu, Central Kenya, which sits at 1,750 metres above sea level, providing ideal conditions for cultivating coffee.
The estate is owned by Daniel Kimani Ngumi, who even shares a name with members of Jean's family.
Grown in the deep red volcanic soils of Kiambu county, this coffee is processed on site. At 12 hectares, the farm is considered small in Kenya and many of its size do not have their own processing equipment, instead taking their coffees to nearby mills.
Daniel, however, has his own small wet-mill where he can process his own coffee, ensuring full traceability back to his farm.
Cherry is selectively handpicked and then pulped. It is then fermented for 12 to 24 hours in a small tank before being washed in clean water to remove any remaining mucilage.
Parchment is soaked for 24 hours then transferred to raised beds where it sun-dries for 14 to 20 days. As it dries, parchment is turned regularly to ensure even drying.
Mark has spent the past nine months waiting to be able to share this washed coffee with you and he's counting down the next couple of weeks until he can roast it for you.
Now that the full contents of the Christmas Box has been revealed, it means our special discounts to reward you for putting your trust in Mark's coffee-selecting skills have come to an end. There's good news, though, because Mark has unexpectedly found himself filled with Christmas spirit and has decided to give you one final discount before putting the boxes up to full price.
So, if you order by the end of November, you'll get 10% off your Christmas Box and Christmas Decaf Box pre-orders. That really is it, though; when December 1 arrives, all discounts come to an end and the boxes will go up to full price.
All Christmas pre-orders, including Christmas Stocking Fillers, will be sent out on December 12, having been roasted a couple of days earlier to ensure peak freshness for Christmas Day.
